<p>Ingredients:<br />
1/2 lb. ground beef, ground chicken, or ground turkey<br />
1 (32 oz.) jar spaghetti sauce<br />
1/2 c. water<br />
1 1/2 c. Ricotta or cottage cheese<br />
1 egg<br />
1/2 tsp. pepper<br />
8 lasagna noodles, uncooked<br />
8 oz. Mozzarella cheese, thinly sliced<br />
1/2 c. Parmesan cheese</p>
<p>Directions:<br />
Set power at High. In large glass bowl crumble ground beef. Heat 2 to 3 minutes until beef is browned, stirring once; drain. Stir in spaghetti sauce and water. Combine cheese, egg and pepper. In oblong baking dish spoon 1/2 cup sauce; then alternately layer noodles, egg mixture, Mozzarella cheese and sauce, forming two layers. Heat, covered, 8 minutes at high. Set power at medium low. Heat covered 30 to 32 minutes or until noodles are tender. Top with Parmesan cheese and let stand covered 15 minutes before serving.</p>

<li>1 small onion (diced) <span style="font-style:italic;">(I have fussy men so I usually leave it whole to remove later and eat as a special treat JUST FOR ME!)</span></li>
<li>1/2 cup dried kidney beans <span style="font-style:italic;">(I used one whole can)</span></li>
<li>4 medium beets (roots and tops cut off, wash well, boil in salted water til beets are soft. Remove the skin and grate the beets, save the water for borscht)</li>
<li>1 <span class="blsp-spelling-corrected">potato</span> (diced)</li>
<li><span style="font-style:italic;">(I added 1 cup shredded carrots)</span></li>
<li>salt</li>
<li>pepper</li>
<li>a bit of parsley ( I substituted fresh dill weed in cheesecloth&#8230;boil with broth and then removed later. I also added one bay leaf.)</li>
</ul>
<ol>
<li>Boil meat, beans and onion in a medium pot. Add salt and pepper and chopped parsley (<span style="font-style:italic;">or dill and bay leaf).</span> <span style="font-style:italic;">Simmer for as long as you can&#8230;it really brings out the flavour.</span></li>
<li>Remove spices <span style="font-style:italic;">(and herbs)</span>.</li>
<li>Add the grated beets and diced potatoes (carrots) and beet water. Bring to a boil again and simmer until vegetables are tender.</li>
<li>Before serving, stir in a bit of fresh cream.</li>

<p>1 cup raisins<br />

2 teaspoons cinnamon<br />
1 teaspoon nutmeg<br />
1 teaspoon allspice<br />
1 cup pecans, chopped</p>
<p>Combine ingredients, except for eggs. Divide batter in half. To one half, add the egg yolks, well beaten, and the raisins, cloves, cinnamon, nutmeg, and allspice. To other half of mixture, add egg whites, beaten to a stiff froth, and the chopped pecans. Bake in four layers. Let cool.</p>
<p>Filling:<br />
1 small can crushed pineapple<br />
1 1/2 cups sugar<br />
1/2 cup lemon juice<br />
Butter, the size of an egg<br />
1/2 grated fresh coconut<br />
1/2 cup sweet milk<br />
1 small bottle candied cherries</p>
<p>Place pineapple, juice from cherries, milk, sugar, and butter in saucepan and bring to a boil. Cook until mixture spins a thread. Add about a fourth of the coconut and lemon juice. Stir well.</p>
<p>Place filling between layers and sprinkle coconut over filling between each layer. Spread filling mixture on top of cake and sprinkle with coconut. Put whole cherries on top. Serve for a joyful celebration!</p>

<p>2 lbs. boneless, skinless chicken breast, cut into 1 1/2-inch cubes (optional)<br />
2 lbs. sirloin tip, cut into 1 1/2 cubes (optional)<br />
3 sweet potatoes, peeled and cut into chunks<br />
1 pint cherry tomatoes<br />
1 lb. mushrooms<br />
2 bell peppers, seeded and cut into chunks<br />
1 onion, cut into chunks<br />
Orange and Wine Marinade (recipe follows)</p>
<p>Place the chicken, sirloin, sweet potatoes, tomatoes, mushrooms, peppers and onion in a large bowl and pour Orange and White Marinade over them. Refrigerate overnight or whatever time permits. Assemble the meat and vegetables on metal skewers, without crowding the pieces together. Grill on a hot grill for 10- 15 minutes, turning frequently. Baste with the remaining marinade while grilling. Makes 8 to 10 skewers.</p>
<p>Orange and Wine Marinade<br />
1 cup dry red wine<br />
1/4 cup reduced-sodium soy sauce<br />
1 cup orange juice<br />
1 tbsp. dried thyme<br />
1 tbsp. dried rosemary<br />
2 tbsp. Worcestershire sauce<br />
1 tbsp. pepper<br />
1 tbsp. minced garlic</p>
<p>Mix together the wine, soy sauce, orange juice, thyme, rosemary, Worcestershire sauce, pepper and garlic in a bowl.</p>

Salt and pepper to taste<br />
1 cup yams, peeled and shredded<br />
1/2 cup chopped red onion<br />
1 cup canned black beans, rinsed and drained<br />
2 green onions, sliced<br />
1/4 cup shelled sunflower seeds<br />
2 tbsp. light Italian or Caesar dressing<br />
1 tsp. honey<br />
6 flour tortillas, warmed to soften</p>
<p>Salt and pepper catfish and place on grill coated with cooking spray. Grill 4-5 minutes on each side until fish flakes easily when tested with a fork. Cut into 1-inch strips. Meanwhile, in a skillet coated with nonstick cooking spray, sauté shredded yams over medium high heat about 5 minutes or until crisp. Transfer to bowl. In same skillet, sauté red onion for about 5 minutes until tender. Add sautéed onion, black beans, green onions, and sunflower seeds to shredded yams; mix well. In small bowl, mix together dressing and honey; toss with yam mixture to coat. Lay pieces of catfish in tortilla, top with yam mixture, fold and wrap. Makes 6 servings.</p>

Introduction:<br />
In selecting mushrooms, look for firm, dry skin. Colors vary from white to brown.</p>
<p>Makes 4 servings.</p>
<p>Step 1:<br />
Preheat broiler. Arrange mushrooms, stem side down, on rack over a broiler pan.</p>
<p>Brush generously with oil and broil until slightly soft. Transfer to a bowl and stir in remaining ingredients. Marinate at least 2 hours.</p>
<p>Step 2:<br />
Preheat the broiler. Line a broiling pan or shallow baking pan with the rock salt or a layer of crushed foil. Cut each slice of bacon in half crosswise, then lengthwise. In a small bowl, mix the parsley with the garlic.</p>
<p>Tip:<br />
To prepare mushrooms, gently clean with a damp paper towel or wash under cold water and pat dry. Trim or remove stems.</p>

<li>2 tsp garlic ginger paste</li>

<li>1 onion, chopped</li>
<li>1/2 bunch parsley, chopped</li>
<li>2 tomatoes, chopped</li>
<li>1/2 tsp oregano</li>
<li>1/2 tsp rosemary</li>
<li>1 packet mozzarella cheese, grated</li>
<li>Salt to taste</li>
<li>Oil as required</li>
<li>1 tsp black pepper</li>
<li>1 tsp white pepper</li>
<li>1/2 packet pasta</li>
</ul>
<p><strong>Method:</strong></p>
<ul>
<li>Boil the pasta and drain.</li>
<li>In a bowl take mince, salt, black and white pepper, rosemary and oregano and garlic ginger paste. Mix it all well. Now make a small size balls and fry them in hot oil on medium heat till they are golden brown.</li>
<li>In other pan take 2 tbsp oil and sauté garlic ginger paste. Add tomato paste, onion, parsley and tomatoes. Cook it for 2-3 minutes with little water.</li>
<li>Add meat balls in this gravy.</li>
<li>Add pasta also and then add salt, black and white pepper, oregano and Worcester sauce.</li>
<li>Add grated cheese over it.</li>
<li>Serve hot.</li>

<li>1 White onion, chopped</li>
<li>4 Garlic cloves, pressed -and minced</li>
<li>1/4 c Minced cilantro</li>
<li>1 Red bell pepper, roasted, -cored, seeded, sliced</li>
<li>1 Anaheim chile pepper, -roasted, cored, seeded, -sliced</li>
<li>1 Jalapeno chile pepper, -roasted, cored, seeded, -minced</li>
<li>1 1/2 tb Chili powder</li>
<li>2 ts Ground cumin</li>
<li>2 ts Crumbled dried oregano</li>
<li>Cayenne pepper to taste</li>
<li>1 lb Tomatoes, peeled, seeded -and chopped</li>
<li>1 ts Green salsa</li>
<li>2 ts White wine</li>
<li>Salt</li>
<li>1/2 lb Shrimp, shelled, de-vein</li>
<li>1/2 lb Scallops</li>
<li>2 lb Clams, steamed, shelled</li>
<li>1/2 lb Firm fleshed fish… snapper -or monkfish, cut into -bite-sized chunks</li>
<li>1/2 c Grated cheddar cheese</li>

<p><span style="font-family:COMIC SANS MS;"><span>Heat oil in a wide, deep skillet. Saute the onions, garlic and cilantro until the onions are soft and translucent. Add bell pepper, Anaheim and jalapeno peppers, chili powder, cumin, oregano and cayenne and stir well to mix. Stir in tomatoes and green salsa, cook over low heat, stirring often, until the tomatoes break down into pulp. When mixture starts to stick to the pan, add the wine and stir vigorously to loosen it and make a dense sauce. Season to taste with fresh cilantro. Stir in shrimp, scallops and fish. Simmer until all are opaque when cut into, about 12 minutes. Add clams and simmer another 2-3 minutes. Remove from heat and stir in cheese, if desired. Garnish with sour cream and serve.<br />
